Nestled in the picturesque village of Laubach, on the edge of the Vosges du Nord nature park, just a stone’s throw from Strasbourg, La Merise began its story in October 2016.
Crowned with a first star in the prestigious Michelin Guide in 2018, the establishment has been honored with a second star in 2021, consecrating its culinary excellence.
Designed and built with passion by Christelle and Cédric Deckert, the building blends harmoniously into its exceptional surroundings. This address reflects their aspiration to offer the sense of wonder characteristic of the luxurious places where they have forged their expertise.

The result is an imposing structure spanning more than 600m², housing two dining rooms, a seminar room and a remarkably elegant contemporary wine cellar.
The restaurant’s architecture, with its oak half-timbering, biberschwanz tiles and carefully reclaimed Vosges sandstone, reveals the precious heritage of Alsatian craftsmen.
The charm of La Merise blossoms in the magic of plants. The flower meadow, pampered by the loving hands of Christelle and Cédric Deckert, tells the story of their ongoing commitment to ensuring the site’s vegetation flourishes.
Since its birth, La Merise has evolved like an infinite metamorphosis, adorned with a fragrant garden where the chef draws the herbs that magnify his creations, and six beehives, today offering the sweetness of a Flower Honey.
For the well-being of guests from all over the world, a new helipad is now available.
