Alsatian Elegance
Nestled in the picturesque village of Laubach, on the edge of the Northern Vosges Nature Park, just a stone’s throw from Strasbourg, La Merise opened its doors in October 2016.
Awarded its first Michelin star in 2018, the restaurant was honored with a second star in 2021, cementing its culinary excellence.
Conceived and built with passion by Christelle and Cédric Deckert, the building blends harmoniously into the exceptional surroundings that embrace it. This establishment reflects their aspiration to offer the sense of wonder characteristic of the prestigious establishments where they honed their skills and developed their talents.
The building’s authenticity contrasts harmoniously with the contemporary elegance of the interior design. This setting provides the backdrop for a gastronomic experience that elevates seasonal ingredients.
Culinary Poetry in the Heart of Nature
Spanning over 600 square meters, the architecture of La Merise—with its oak half-timbering, Biberschwanz tiles, and carefully salvaged Vosges sandstone—reveals the precious legacy of Alsatian artisans.
The charm of the establishment blossoms in the nobility of its greenery. The flower-filled meadow, tended with loving care by Christelle and Cédric Deckert, speaks to their ongoing commitment to nurturing the site’s vegetation.
Since its inception, La Merise has evolved through a constant metamorphosis, adorned with a fragrant garden where the chef gathers the herbs that accompany his creations, and six beehives, now offering the sweetness of a floral honey.
