Alsatian Elegance
Nestled in the picturesque village of Laubach, on the edge of the Vosges du Nord nature park, just a stone’s throw from Strasbourg, La Merise began its story in October 2016.
Awarded its first Michelin star in 2018, the establishment was honored with a second star in 2021, thus recognizing its culinary excellence.
Designed and built with passion by Christelle and Cédric Deckert, the building blends harmoniously into its exceptional surroundings. This establishment reflects their aspiration to offer the characteristic wonder of the prestigious establishments where they forged their experience and developed their talents.
The authenticity of the building contrasts harmoniously with the contemporary elegance of the interior design. This setting provides a backdrop for a gastronomic experience that enhances seasonal produce.
Culinary Poetry in the Heart of Nature
Spanning over 600m², the architecture of La Merise, with its oak half-timbering, Biberschwanz tiles, and carefully reclaimed Vosges sandstone, reveals the precious heritage of Alsatian artisans.
The establishment’s charm flourishes in the nobility of its vegetation. The flower meadow, cared for by the loving hands of Christelle and Cédric Deckert, reflects their ongoing commitment to the flourishing of the site’s vegetation.
Since its inception, La Merise has envolved like a permanent metamorphosis, adorning itself with a fragrant garden where the Chef draws the herbs to accompany his creations, and six beehives, now offering the sweetness of a flower honey.
La Merise is a truly enchanted interlude. Set in the middle of the Alsatian countryside, it is a marvellous haven of refinement.
